#1 Grilled Meatloaf Paleo Patties

The perfect dinner when you need to whip something up, but need to be free to stop in-between steps to preparing/cooking. The only time sensitive aspect of this dish is the cooking portion. These patties taste like delicious, healthy meatloaf and multi-tasking freedom.

#2 Decadent, Easy Philly Cheesesteak Egg Rolls

Mmmmm, a positively indulgent dinner! Don’t you think you’ve earned it, though? Besides, portion control with these rolls is super easy. You can also add in more vegetables if you’d like! You will need to set aside a little extra time for this recipe than the others due to the two-step preparation for the meat/filling and the filling/frying of the egg rolls. It’s still not overly time-consuming, and it’s sure to please EVERYONE at the dinner table. It looks complicated but I promise it’s not. If you’re feeling brave have the kids help fill and fold the egg rolls. It’s fun yet almost impossible to mess up!

#3  Grilled Steak Kabobs with Veggies

Finger-food is seriously one of the easiest ways to keep kids entertained. Throw in a stick they have to work around, and dinner-time becomes a game for them. These kabobs are the perfect mix of meaty flavor and fluffy, herbed potato. Maybe you’re cooking for family, maybe you’re cooking for a couple of friends. Whatever the situation, you’ll enjoy the easy preparation and grilling of this dish and they’ll enjoy chowing down on it. (On a side note, kabobs are great because you’re not committing to a whole steak or a whole potato. You can take one, two, four, or five. You have far more control over your portions without that nagging obligation to finish your plate.)

#4 Grilled Paleo Beef Tenderloin Dream

If you can remember and make time to set out the tenderloins on the counter for one hour before cooking, this recipe is for you! It’s also to-die-for. Juicy, melty tenderloins (also known as filet mignons) with a hint of herb and garlic, and a nice crust layer of salt and pepper. Combined with a sauce that is both mild and generous in flavor….my goodness. You can’t beat the indulgence OR the quick prep/cook time. Stop drooling. Start cooking.

Prep Time: 20 minutes                       Cook Time: 7 minutes                        Serves: 4

Tenderloins_and_garlicMain Ingredients:

When it comes to cooking a tenderloin (aka filet mignon), there is a simple guideline to follow. The base rule is each starting time applies to a 1 inch-thick steak. For each quarter inch you add to the thickness, add on two minutes cooking time. 

Rare: Cook a total of 8 minutes for 1 inch-thick steak. 10 minutes for 1 ¼ inch-thick, etc.     

Medium Rare: Cook a total of 10 minutes for 1 inch-thick steak. 12 minutes for 1 ¼ inch-thickness, etc.

Medium: Cook a total of 13 minutes for 1 inch-thick steak. 15 minutes for 1 ¼ inch-thickness, etc.

Medium Well: Cook a total of 18 minutes for 1 inch-thick steak. 20 minutes for 1 ¼ inch-thickness, etc.

#5 Cast Iron New York Striploin

A dinner requiring just a few ingredients to yield a flavor-packed steak? Yes, please! Possibly the easiest recipe in this list. It’s also possibly the most delicious. Maybe it’s the cast iron skillet? Or the great cut of meat? Who knows. Who cares?! If you have the time to let the steak rest for an hour before you begin, make this recipe TONIGHT.
