Paleo Slow Cooker Meatballs
Love meatballs, but don’t love the work? These 100% grass fed ground beef meatballs are amazing and by using the slow cooker, you can do the prep with 15 minutes in the morning and have a pot full of goodness for dinner that night! Serve up these meatballs in marinara sauce over veggie noodles, sweet potatoes or even try them on their own. They also fit your Paleo lifestyle and Whole 30 diet!

****Each slow cooker is a bit different. I cooked mine for 4 hours, you can check at 3.5 hours if you can and adjust cook time from there, if necessary. Cook time should not be longer than 4.5/5 hours or meatballs will be overcooked and dry.
Paleo Shepherd’s Pie
Whether you want to stick with the original recipe, or try this version using pureed cauliflower in place of the mashed potatoes, you can’t go wrong on a cold fall day with a good ole’ Shepherd’s Pie. When you use 100% grass fed ground beef in the filling, you've just created a meal that is sure to please the wasteline and the taste buds!

Instructions
The preparation of this meal is simple. Just steam the cauliflower in a steamer or a pressure cooker. In a separate skillet, stir fry the onions, garlic, zucchini and carrots in olive oil or coconut oil. Add the meat, salt and chili powder. In a blender, puree the cauliflower until it is smooth (adding a bit of roasted garlic to this tastes great).
In an 8x8 glass baking dish, pour the meat and veggie mixture in first, then spread the cauliflower puree on top. Sprinkle with Parmesan cheese. Bake 350°F for about 30 minutes. Let it cool for 5 minutes, serve and enjoy!
