This soup is not only full of hearty nutritious ingredients, but it is Paleo and Whole 30 approved. When you are looking for a warm pot of goodness to serve to your family after a busy day, this is sure to have them asking for more! Get your dinner started with this yummy paleo ground beef recipe:

Ingredients:


1 lb of Western Grassfed Ground Beef 
2 cups of sliced skinless Tomatoes- about 7 tomatoes, blanched to take the skins off) 
5 cups of Beef Bone Broth
1 can tomato paste
1 Sweet Onion 
2 Sweet Potatoes (cut into small cubed- keep skins on)
1 Red Jalapeno 
5 cloves of Garlic 
1 Tbsp   and 1 tsp Paprika 
1 Tbsp and 1 tsp  Cumin 
1 tsp Garlic powder 
1 tsp Cayenne 
1 tsp Salt 
1 Tbsp Olive Oil 
1 Tbsp Ghee 
1 tsp dried parsley
Parsley

Taco-Stuffed Sweet Potatoes

This easy to prepare dinner is also kid-approved (and husband approved too!) And when it comes to finding paleo ground beef recipes for the whole family can enjoy, Paleo Leap nailed this one! These tacos could actually be easier to make than traditional tacos by using a sweet potato in place of the taco “shell” you can use your fork and knife to get all the flavor and keep the toppings from falling all over your plate!

Ingredients:

1 lb Western Grassfed Ground Beef
4 sweet or russet potatoes
1/2 onion, diced
1 tomato, diced
1 bell pepper diced
1 cup fresh lettuce, shredded
½ cup chopped green onions
Fresh salsa

Taco seasoning:

1 tbsp chili powder
1 tsp ground cumin
½ tsp paprika
½ tsp dried oregano
½ tsp garlic powder
Sea salt and freshly ground black pepper

Paleo Slow Cooker Meatballs

Love meatballs, but don’t love the work? These 100% grass fed ground beef meatballs are amazing and by using the slow cooker, you can do the prep with 15 minutes in the morning and have a pot full of goodness for dinner that night! Serve up these meatballs in marinara sauce over veggie noodles, sweet potatoes or even try them on their own. They also fit your Paleo lifestyle and Whole 30 diet!

Ingredients:

For the Meatballs:

1 and ¾ lbs Western Grassfed Ground Beef
1 egg
¼ cup blanched almond flour
¾ tsp fine grain sea salt, divided
2 tsp onion powder
½ tsp garlic powder
1 tbsp Italian seasoning blend**
generous pinch crushed red pepper (adjust for spice preference)
1 tbsp chopped fresh parsley - optional

For the Sauce:

1 - 28 oz can crushed tomatoes with basil***
1 - 14 oz can diced tomatoes with basil and garlic***
1 - 6 oz can tomato paste
½ medium onion, chopped
2 tbsp chopped fresh garlic
2 tbsp chopped fresh oregano leaves
2 bay leaves
sea salt to taste

NOTES from Paleo Running Momma:

*You can use your favorite mix of ground meat as well
**I used this one
***I used this can of crushed tomatoes and this can of diced tomatoes - I recommend always adding extra basil and garlic if you use plain tomatoes.
****Each slow cooker is a bit different. I cooked mine for 4 hours, you can check at 3.5 hours if you can and adjust cook time from there, if necessary. Cook time should not be longer than 4.5/5 hours or meatballs will be overcooked and dry.

 

 


 

Paleo Shepherd’s Pie

Whether you want to stick with the original recipe, or try this version using pureed cauliflower in place of the mashed potatoes, you can’t go wrong on a cold fall day with a good ole’ Shepherd’s Pie.  When you use 100% grass fed ground beef in the filling, you've just created a meal that is sure to please the wasteline and the taste buds! 

Ingredients:

1 head cauliflower
1 lb Western Grassfed Ground Beef
½ onion chopped
5 cloves garlic chopped
1 shredded zucchini
1 shredded carrot
chili powder
salt

Instructions

The preparation of this meal is simple. Just steam the cauliflower in a steamer or a pressure cooker. In a separate skillet, stir fry the onions, garlic, zucchini and carrots in olive oil or coconut oil. Add the meat, salt and chili powder. In a blender, puree the cauliflower until it is smooth (adding a bit of roasted garlic to this tastes great). 

In an 8x8 glass baking dish, pour the meat and veggie mixture in first, then spread the cauliflower puree on top. Sprinkle with Parmesan cheese. Bake 350°F for about 30 minutes. Let it cool for 5 minutes, serve and enjoy!

 


 

Zucchini Lasagna*

Ditch the pasta with this yummy recipe using zucchini slices to divide your layers of ground beef, sauce, and cheese. *Due to the added cheese, this recipe isn't considered paleo, but it is a dish that is sure to delight the whole family! Ingredients:

1 lb  Western Grassfed Ground Beef
1 1/2 teaspoons kosher salt
1 tsp olive oil
1/2 large onion, chopped
3 cloves garlic, minced
1 (28 oz can) crushed tomatoes
2 tbsp chopped fresh basil
black pepper, to taste
3 medium (8 ounces each) zucchini,
      sliced 1/8″ thick
1 1/2 cups part-skim ricotta
1/4 cup Parmigiano Reggiano
1 large egg
16 oz (4 cups) shredded mozzarella cheese
