Grass Fed Ground Beef Mini Meaty Meatloaf…try saying that three times fast! The name may not be quick on the tongue, but it is quick in the kitchen. This ground beef recipe is fast, convenient, simple, tasty, and bite-sized. Not to mention, because it’s made with 100% grass fed ground beef from Western Grassfed Beef, it’s healthy (and Paleo friendly!) Really, what’s not to love!?
All you need to make this dish is a muffin pan, an oven, some ingredients, and hungry tummies to feed. So what are you waiting for?!
WGB’s Original Mini Meaty Meatloaf
|Prep Time: 15 minutes
||Cook Time: 20-25 minutes||Serves: 4|
|1 lb||Western Grassfed Beef’s Grass Fed Ground Beef|
|1/2||Medium sized onion, diced|
|1||Egg, whisked (or equivalent to 1 egg in egg whites.)|
|1/2 cup||Panko bread crumbs (for a paleo friendly recipe, substitute 1/2 cup gluten free flour. We like to mix one part almond flour, one part coconut flour, and one part brown rice flour for the most well-rounded, multi-purpose flour.)|
|1/4 cup||Ketchup (did you know Paleo ketchup is a THING now!?)|
|1/4 cup||Fresh parsley|
|2 tsp||Garlic powder|
|2 tsp||Worcestershire sauce|
Preheat oven to 375 degrees F.
Spray a light coating of cooking oil on muffin pan.
Empty your ground beef into a bowl. Mash it and stir it to break up the meat.
Empty all remaining ingredients into the ground beef bowl. Mix well.
Take your meat mixture and divide into 12 individual meatballs. If your muffin pan has 6 spaces instead of 12, simply cook in 2 batches.
Place each meatball into its own space in the muffin pan.
Bake in the oven for 20 minutes. Ensure the meat is cooked to 160 degrees before removing from oven.
Remove muffin pan from oven and allow meatloaf to cool. If you are feeling extra indulgent, drizzle a little extra ketchup on the top of each mini meatloaf immediately after removing from the oven.
