Grass Fed Ground Beef Stuffed Mushroom Appetizers [Recipe]

Looking for an appetizer that is sure to impress, but easy to make and good for you? Then look no further than these tasty mushrooms stuffed with 100% grass fed ground beef. The flavors will tantalize taste buds and everyone will be asking for your recipe!

This recipe makes about 14 mushrooms, so you may want to double or triple the recipe just to make sure there are enough to go around!

Grass Fed Ground Beef Stuffed Mushroom Appetizers

Prep Time: 15 minutes  

Oven Cook Time: 20 min.  Serves: 6-8

Stuffed Mushrooms on tray

Ingredients:

Meatballs:

12 oz Western Grassfed Ground Beef  
3 oz   Water chestnuts from a can, chopped fine
1/4 cup  Onion, diced
2 Garlic cloves, peeled and minced or 1/4 tbsp dried
2 tsp Ginger
1 tsp Honey
1 tbsp Soy sauce
1 tsp Chili sauce like Siracha, optional
1/2 tsp Salt
1/4 tsp Freshly ground black pepper
1 tbsp Fresh cilantro or parsley, chopped
2 tbsp Olive Oil (we like Kasandrinos)
1 tbsp Large Cremini or white mushrooms (2 inch diameter), rinsed & stem removed.
2 Red radishes for garnish (optional)

 

Instructions:

  1. . Preheat the oven to 400 degrees F.

  2. In mixing bowl stir to combine grass fed ground beef, onion, water chestnuts, garlic, ginger, honey, soy sauce and spices. Mix well until beef sticks together 1-2 minutes.

  3. Drizzle a large baking sheet with about 1 tablespoon olive oil, to coat.

  4. Make meatballs roughly the size of the medium mushrooms.

  5. Press the meatball into the opening of the mushrooms, rounding the top and making it nice and neat. Arrange on the baking sheet, meat side up, mushroom cap upside down.

  6. Drizzle remaining oil over the filling in each mushroom, sprinkle with salt.

  7. Bake for 15- 20 minutes until the mushrooms are tender and the filling is firm and golden on top. 

  8. Garnish each mushroom with a small pinch of shaved radish, serve warm or room temp.
