Grilled Meatloaf Paleo Patties with Grass Fed Ground Beef [Recipe]

August 03, 2016

Meatloaf-PattiesLooking for a quick and easy recipe for dinner tonight? If you are living the Paleo lifestyle, you may already have all these ingredients in your cupboard! With all the great Paleo ground beef recipes out there, this is the perfect dinner when you need to whip something up, but need to be free to stop in-between steps. The only time sensitive aspect of this dish is the cooking portion. These ground beef patties taste like delicious, healthy meatloaf and multi-tasking freedom.

Prep Time: 10 minutes   Cook Time: 20 minutes   Serves: 4

1 lb 100% Western Grassfed Ground Beef
1/4 cup Onion, finely chopped
1 Large egg, beaten
2 tbsp Worcestershire Sauce
1 tsp Of the following spices:
  Garlic powder
  Smoked paprika
  Red pepper
  All spice
  Salt and pepper
3/4 cup Flax Meal (or any other Paleo substitute, like Almond Flour. Some will produce a different consistency, and may require more or less than 3/4 cups. Be sure to use a meal or flour you are familiar with to adjust accordingly.)
4 tbsp  Paleo Ketchup (bonus if it’s homemade!)

1/4 cup Paleo Ketchup
1 tsp Paleo Mustard (bonus if it’s homemade!)
1 tsp Paprika
1 tsp Dried, ground ginger (if you don’t have it, don’t panic. Omitting it will not degrade the flavor of the sauce.)

  1. Combine all patty ingredients in a bowl, mixing well. The ground beef and ingredients should stick together. If they feel loose, add a little more beaten egg.

  2. Roll meatloaf mixture into 4 or 5 balls approximately 2 inches in diameter. Smash down into patties.

(If you have the time, cover the patties and place in the fridge for 1 hour to set. This is not necessary to have successful meatball patties, but will improve the quality and flavor of them. Remove patties from fridge 15 minutes before you grill them.)
  3. Mix the sauce ingredients together, set aside.

  4. Fire up the grill, heating to medium-high heat. Oil the grill well.

  5. Grill the meatloaf patties for 6 to 7 minutes on each side. If they are cooking too quickly, adjust the temperature of your grill.

  6. During the last two minutes of cooking, brush patties with the sauce, cooking patties for roughly one to two minutes on each side to caramelize the sauce.

Serve on a lettuce wrap/bun, by itself, topped with tomato, or with a side salad. You have options with a meatloaf patty as good as this one!
