Grilled Steak Kabobs with Veggies [Recipe]

Beef Kabobs and vegetables over the grillThese beef kabobs are the perfect mix of meaty flavor and fluffy, herbed potato. Maybe you’re cooking for family, maybe you’re cooking for a couple of friends. Whatever the situation, you’ll enjoy the easy preparation and grilling of this dish and they’ll enjoy chowing down on it. (On a side note, steak kabobs are great because you’re not committing to a whole steak or a whole potato. You can take one, two...or five. You have far more control over your portions!) You can choose the cut of steak you like the best for your kabobs, but skip the prep with our Beef Kabob Grill Pack. Grilled Steak Kabob Recipe

Prep Time: 20 minutes plus 2.5 hours to marinate Cook Time: 10 minutes   Serves: 6 

 

Ingredients:

1 lb Western Grassfed Beef Kabob Grill Pack
8 oz *Whole mushrooms, rinsed 
1 lb Small red, gold, or other colored potatoes, washed
1/4 cup Olive Oil (we like Kasandrinos)
1/3 cup Balsamic vinegar
2 to 4 Garlic cloves, minced
1 tsp Dried sage
1 tsp Dried rosemary
1 tsp Dried oregano
1 tsp Salt and pepper
  Kabob skewers, soaked in water for one hour
Optional: Add bacon. Simply cook halfway, drain the grease, and set aside. Once it’s cooled, cut into 1 to 2 inch pieces.
  Red or yellow peppers, zucchini, or onions in large 1-2 inch slices.

*Any mushroom, save for portabella, will work.  Shitake mushrooms work well because of their meaty flavor, but the choice is up to you. If you use shitake, be sure to cut off the stems. You can save them for another recipe, but removing the stems will allow for a more visually appealing kabob!

 

Instructions:

 

  1. Mix the oil, vinegar, rosemary, garlic, oregano, sage, salt, and pepper together in a medium bowl.

  2. Rinse and dry kabob meat, and add to a baking pan with the mushrooms.

  3. Pour the mixture from the medium bowl over the steak and mushrooms. Cover and refrigerate for at least 2.5 hours.

  4. While the mixture marinates, boil a large pot of salted water. Add potatoes, cooking until they are slightly tender. Remove the potatoes and set aside. This should only take approximately 10 to 15 minutes. If you can manage the timing, do this within the last 30 minutes of the meat marinating. It will allow the potatoes to cool after cooking, but not become entirely cold.

  5. As the time comes to remove the meat mixture from the refrigerator, fire up the grill to medium-high heat. Don’t forget to oil the grate! It will help sear your kabobs, locking in flavor and giving them beautiful grill marks.

  6. Remove your skewers from the water and dry them off. Thread the potatoes, steak, and mushrooms onto each one. If you are adding bacon as well, try placing it next to the potatoes on the skewer to really spread the flavor around.

  7. Grill your veggie & steak kabobs for 10 to 12 minutes, flipping them only once. The grill time is 10 to 12 minutes, but you are free to adjust time to suit desired doneness.

  8. Remove kabobs from the grill, and sprinkle a dash more of salt and pepper.

 

Serve with your choice of side. Considering the grill is already fired up, try one of these recipes for grilled corn to polish off the meal!
