Instant Pot Tacos - Main Image


Some of my favorite meals to make are the ones that require the least amount of work. Because after a long day at work, who really wants to go through the effort of an entire recipe?

My usual go-to on lazy days is the slow cooker, adding ingredients and returning later to a finished meal. But what if you don't have hours to wait for a meal to complete? That's where the Instant Pot comes into play. The Instant Pot pressure cooks food very quickly. Which makes it perfect for today's two recipes: easy shredded beef tacos using 100% grass-fed and grass-finished beef chuck roast, a versatile cut of meat for any time of year.

The first recipe, found on Tasty Ever After, is beyond simple. It requires just a few ingredients and a few steps of instructions.

First, make sure you have the following ingredients:

1 Instant Pot Pressure Cooker

1.5 lb. 100% grass-fed and grass-finished beef chuck roast, cut into 1 1/2 inch cubes

1 cup salsa

1 tbsp. avocado oil or olive oil

1 to 2 heads lettuce (substitute for corn or flour tortillas, if desired)

Non-Required Extras: pico de gallo, shredded cheese, sour cream, and guacamole

Then, follow these steps:

  1. Place oil in Instant Pot, set to saute on high, and brown the beef cubes on all slides. Stir in the salsa, cover, and lock lid in place. Then select the "stew meat" option.
  2. When the Instant Pot finishes, it will beep. Wait 10 minutes after it finishes, or release pressure manually by taking a hand towel and carefully opening the steam valve on the lid until all steam has been released.
  3. Stir the beef mixture. If there is too much liquid, you can turn on the saute (the high setting) and continue stirring mixture until liquid has evaporated. Place beef in lettuce leaves or tortillas and serve with any additional desired ingredients (pico de gallo, shredded cheese, sour cream, guacamole, etc).

The second recipe, found on Taste and Tell, requires a few more steps but is still a very easy recipe to follow.

First, gather the following ingredients:

1 Instant Pot Pressure Cooker

3 lb. 100% grass-fed and grass-finished beef chuck roast

2 tbsp. olive oil

1 can chipotle in adobo, chopped (seeds removed for less heat)

1 tbsp. adobo sauce (from the chipotle with adobo can)

2 tsp. dried cumin

2 tsp. dried oregano

2 tsp. salt

1 tsp. black pepper

1/2 tsp. chili powder

1 cup lightly packed fresh cilantro, roughly chopped

1 onion, peeled and quartered

1 green bell pepper, seeded and cut into large chunks

1 cup water

Then, follow these steps:

  1. Salt and pepper the roast generously.
  2. Press sauté on the Instant Pot and add the olive oil. Then add the roast, browning it on both sides, about 3 to 4 minutes per side.
  3. Remove the roast and drain any oil or fat that may have collected.
  4. Place the roast back into the pot and spread the chipotle pepper, adobo sauce, cumin, oregano, salt, pepper, chili powder, cilantro, onions, and bell pepper over the top of the roast, making sure to cover evenly and entirely.
  5. Pour the water around the edges of the roast in the pot.
  6. Close the pot and select high pressure for 60 minutes.
  7. When the Instant Pot finishes cooking, it will beep. At this point, turn the cooker off and use natural pressure to release. When the valve drops, remove the lid.
  8. Remove the meat from the Instant Pot and let it rest for a solid 5 minutes. Then discard the veggies, keeping the liquid.
  9. Shred the meat using a couple of forks, return to the pot and stir in with the liquid from the discarded veggies. Keep warm over low heat until ready to serve.

The shredded beef from both recipes is perfect for tacos, burritos, or even as part of another dish that calls for some shredded beef. Or add it over some rice for a burrito bowl!
