New York Strip Steak with Rainbow Chard and Wild Mushrooms [Recipe]

New_York_strip_steak-_paleo_in_the_wildThis tasty recipe uses minimal ingredients and is Paleo friendly. Using wild mushrooms and chard pare well with the delicious New York strip steaks that are 100% grass fed and grass finished. Whether you are looking for a recipe to impress your significant other or your mouth is watering for a good steak, you have found the right recipe!

Prep Time: 10 minutes   Cook Time: 20 minutes   Serves: 2

 

Ingredients:

2 Western Grassfed Beef New York Striploin Steaks
2 tbsp Coarse ground black pepper 
2 tbsp Garlic powder
1 tbsp Coarse salt
  Ghee or olive oil 
1 cup Wild mushrooms, chopped
1 1/2 tbsp Rainbow chard, shredded by hand and rinsed
  Salt and pepper

 

Instructions:

  1. Heat a cast iron pan over medium high heat. Allow to heat up – you want it hot to sear your New York striploin steaks

  2. Combine the garlic powder, salt, and pepper in a shallow dish.

  3. Add a bit of cooking fat (ghee or olive oil) into the pan.

  4. Coat both sides of the steaks with the seasoning mix and press it to get it to stick.

  5. Add the New York steaks to the pan. Do not mess with them!

  6. Allow the steaks to sear on each side for 4 minutes – for medium rare. 5-6 minutes for medium, and 6-7 minutes for more well-done.

  7. Take the steaks out of the pan and allow to rest for 10 minutes while you cook the vegetables.

  8. Heat a bit more cooking fat in the pan (ghee or olive oil), turning the heat down to medium.

  9. Add in the mushrooms and allow to sauté for 2-3 minutes until beginning to softened.

  10. Add in the rainbow chard and season the mixture with salt and pepper.

  11. Sauté the veggies for another 2-3 minutes until the chard softens.

  12. Plate the vegetables with the steak on top.
