Paleo Pumpkin Meatloaf with Grass Fed Ground Beef [Recipe]

For the changing of the season, we put our heads together to find the perfect delight for the grass fed, grass finished ground beef you’ve stocked your kitchen with. The end result? A Paleo Pumpkin Meatloaf recipe. The best part? It is kid tested, and approved! It’s the perfect way to bring fall flavor to your dinner table using the healthier option of grass fed, grass finished beef.

Cooking the grass fed, grass finished meatloaf takes about 1 hour and 20 minutes, but the prep time is only 25 minutes (most of that time is spent chopping the vegetables…if you can purchase pre-chopped, it will save you a significant amount of time and onion tears). You can mix the ingredients and leave them in the fridge for up to a day, just remember to let them set on the counter for around 30 minutes before tossing them in the oven.

Paleo Pumpkin Meatloaf

Prep Time: 25 minutes  Cook Time: 1hr,  20 minutes   Serves: 4 (or more!)

 

Ingredients:

1 lb Western Grassfed Ground Beef
1 tbsp Olive Oil (we like Kasandrinos), plus extra
1 Small onion, finely chopped
3 Celery stalks, finely chopped
2 Carrots, medium sized, finely chopped
(even better if you have the time to grate them like a zest!)
1/3 cup Pumpkin puree
2 Small eggs
3/4 cup Blanched almond flour (don’t worry, the pumpkin puree and 2 eggs will help hold it together)
1 tbsp Molasses
1/2 tbsp Mustard powder
1/2 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Sage
1 tsp Thyme
1 tsp Parsley
Dash Salt and pepper

Tip: Use dried herbs, they’ll release more flavor during the longer cooking process.

Instructions:

  1. Remove thawed Western Grassfed Beef ground beef from the refrigerator, let set at room temperature while you prep the meal.

  2. Preheat oven to 375 degrees.

  3. Heat olive oil in a medium to large pan

  4. Sauté the onion until slightly translucent (4 to 5 minutes)

  5. Add the celery, carrot, seasoning, and molasses to the pan.  Sauté for 5 to 7 minutes.

  6. Remove pan from heat, set aside.

  7. In a large bowl combine ground beef, blanched almond meal, and eggs mixing well.

  8. Work in pumpkin puree.

  9. Work in the sautéed vegetables and herbs.

  10. Lightly coat two small loaf pans (in a pinch you can use a cake pan, just be sure to check the center with a toothpick after 45 minutes, and again every 15 minutes) in olive oil.

  11. Add the meatloaf mixture to the pans, spreading evenly and taking care not to “smash” the mixture down.

  12. Bake for 1 hour and 20 minutes. Check the center with a toothpick before removing from the oven. If toothpick comes out (mostly) clean, your meatloaf is done!

 

*Molasses and Mustard Sauce

*This sauce is optional. Due to the mustard and vinegar it is not Paleo. You can leave out the vinegar, and there is a super easy Paleo-friendly mustard recipe available here. If you find the sauce is too thin for your taste, thicken it with arrowroot.

Prep Time: 5 minutes Cook Time: 30 minutes    


Ingredients:

1/2 cup Molasses
1 cup Dijon Mustard
1/8 cup Apple Cider Vinegar
1 tbsp Worcestershire Sauce
Dash Salt and Cardamom


Instructions:

  1. Combine all ingredients in small bowl.

  2. Generously brush the mixture on top of meatloaf immediately before baking.

Serve, and enjoy!
