Soup’s On: Sausage, Bean, and Orzo Stew with Beef Bone Broth [Recipe]

Stew is traditionally reserved for the colder months. That being said, we love it any time of the year! Especially this light yet hearty stew made with grass fed, grass finished beef bone broth from Western Grassfed Beef. It’s packed with flavor, filling enough to satiate your hunger for hours and light enough to leave you feeling refreshed after eating rather than bogged down. Can you really expect anything less from our 100% Grassfed Beef Bone Broth, though? We think not!

This recipe is for the days you’d like to whip something up to warm your heart and home without falling into a food coma. It’s simple to make, though you will want to set aside just a little extra time for cooking. If you only have 45 minutes to an hour, that’s fine. Keep in mind, though, the longer it cooks the more flavor you will receive!

Sausage, Bean, and Orzo Stew

Prep Time: 20 minutes  

Cook Time: 1.5 hours Serves: 4

Orzo

Ingredients:

2 pouches Western Grassfed Beef Bone Broth
2 tbsp   Olive oil (We like Kasandrinos)
1 lb Spicy Italian Sausage, cooked and crumbled
1/2 cup Diced celery
1/4 cup Diced carrots
1/2 cup Diced white onion (or yellow)
3 Garlic cloves, minced
1/3 cup Orzo
1/4 cup Chickpeas (aka Garbanzo Beans), cooked and rinsed
1/4 cup Red kidney beans, cooked and rinsed
1 Can, 16 oz of Fire Roasted Tomatoes (crushed or diced)
2 tsp Chili Powder
2 tsp Oregano
2 tsp Chipotle seasoning (or Adobo Sauce)


Instructions:

  1. In a large stock pan (size 6 qt or more) combine celery, carrot, onion, garlic, olive oil, chili powder, and oregano.

  2. Sautee on medium heat until the onions are translucent.

  3. Add in the crumbled sausage, kidney beans, and chickpeas.

  4. Sautee until the sausage begins to release a bit of grease into the pan.

  5. Add the chipotle seasoning (or adobo sauce) and fire roasted tomatoes.

  6. Sautee for 3 to 5 minutes.

  7. Add in the bone broth. Stir well.

  8. Bring pot to a boil and reduce heat to a simmer.

  9. Let simmer for 1 hour, more if possible. Stir gently every 20 to 30 minutes. If the soup reduces more than desired, simply add water.

  10. Rinse the uncooked orzo, and add to pot 10 to 15 minutes prior to removing from heat. Once orzo is cooked (10 to 15 minutes), remove pot from heat.

Add salt and pepper to taste, and enjoy!

The beauty of this stew is you can throw it together on the stove and continue completing your tasks for that day. It allows you to be busy on other things, requiring your attention only once every half hour. While it cooks, it will fill your home with savory aromas and later fill your belly with delicious flavor.
