Tropical Beef Kabobs with Avocado and Pineapple [Paleo Recipe]

Dreaming of the sound of waves against the sand, sun on your face and a cool island breeze? If you can’t hop on a plane to an island destination, then this flavorful recipe is the next best thing! Transform your evening with these 100% grass fed and grass finished beef kabobs and tropical dipping sauce. Your taste buds will thank you! 

This recipe was created, tried and tested by Paleo in the Wild, and we want to thank them for creating such fun recipes with Western Grassfed Beef!

Big Island Beef Skewers
Big_Island_Skewers-Paleo_in_the_Wild

Prep Time: 10 minutes  
                  plus marinating time
Cook Time: 30 minutes Serves: 4-6

Ingredients:

Marinade:

1/4 cup Tamari soy sauce  
2 tbsp   Fish sauce
2 tbsp Rice wine vinegar
1/4 tsp Sesame oil

Dipping Sauce:

1 cup Coconut milk
1/2 cup Almond butter
1 tsp Garlic powder
1 tsp Salt
2 tbsp Honey

Remaining Ingredients:

2 lbs Western Grassfed Beef Kabob Grill Meat
1 cup Fresh pineapple chunks
Large avocado, cut into chunks
  Skewers or toothpicks

Instructions:

  1. Combine marinade ingredients in a ziplock bag. Add in Western Grassfed Beef Kabob Grill Meat and allow to sit in the refrigerator overnight.

  2. The next day, combine the dipping sauce ingredients in a food processor. Remove to a serving dish and set aside.

  3. If you are using a pan: Heat grill pan over medium heat. Lightly grease with olive oil or coconut oil. Grill beef on each side for 2-3 minutes until cooked to desired level. Remove cooked beef and set aside. Repeat with remaining beef.

  4. If you are using a grill: Prep and heat your grill to medium heat. Put kabob beef chunks on skewers and cook on each side for 2-3 minutes.

  5. To serve, skewer the beef on wooden skewers or toothpicks, combining with pineapple and avocado chunks.

  6. Serve with dipping sauce.
